FISSMAN presents its new PROFESSIONAL line of knives for professional kitchens, crafted traditionally in a metal forge. The blade is forged from stainless steel (type X50CrMoV15) supplemented with molybdenum and vanadium. These elements help to improve the quality of the steel and help to create the perfect ratio of hardness and flexibility, which lets the knife preserve its sharp edge even during the toughest jobs. Knives with forged blades are incomparably stronger than stamped knives. Although the process of creating them is expensive and time-consuming, the result is worth it: these knives can withstand the heavy wear-and-tear of daily use.
