• A medium hard cheese knife has a wide thin blade like a utility knife. But its blade has a distinctive feature - holes in the canvas or recesses, the so-called air pockets. Thanks to them, the blade passes freely through a piece of cheese, without crushing it, cutting it into even slices.
• A hard cheese or parmesan knife has a medium-length handle with an unusual blade shape. It is wedge-shaped, resembles a spatula, often double-edged, so you need to be careful when working with such a knife.

These three knives form the basis of the so-called "cheese set" that every professional kitchen should have. In the home kitchen, you can get by with a string knife, cutting with it not only soft, but also hard cheese.

To obtain cheese chips, it is desirable to have a cheese planer or a specialized stainless steel grater with medium-sized holes.

The width of the blade must be at least two centimeters, but not more than five. This design allows you to cut cheese heads into even pieces with a minimum of effort. With a wide blade, holes (air pockets) are desirable, then the knife will go more smoothly and softly, and the cheese will not crumble and wrinkle. For hard cheeses or medium soft cheeses, you can buy a slicer knife that will do an excellent job of slicing.
