Santoku is a traditional Japanese style knife. The word itself means "three virtues" in Japanese, referring to the tasks this knife can perform: cutting, slicing and chopping. It is similar in appearance to the Large Chefs Knife, but has a distinctive shape with a curved tip and a straight blade, often called a "sheeps foot". This shape allows for a more precise up-and-down motion when chopping, which can be more efficient and precise than the back-and-forth motion of using a chefs knife. Santoku knives usually have a notch on the blade called a granton. These grooves help reduce friction and prevent food from sticking to the blade while slicing.
