If you set out to buy cheap wheat flour of the best quality in order to cook at home, as well as for sale, then there is no need to rush to look for the “highest grade” mark on the packages. To begin with, it is worth deciding which dishes it will be included in, and then, based on the properties of each type of flour, choose the one that best meets your requirements.

  • Wheat flour of the highest šķiras. It is almost exemplary white and of the finest grinding. Baking from it comes out the whitest and most porous. But such flour is mostly starch from the central part of the grain, completely devoid of the beneficial properties of cereal.
  • The first šķiras. Inexpensive grayish flour of a coarser grinding: it still got some crushed shells of wheat grains. It is more useful than white, and when cooking, you can use only it, without mixing with a better one.
  • Second šķiras. Its color varies from light yellow to gray and even light brown. It contains many vitamins and microelements, but it is difficult to cook from it and must be mixed with higher grade flour.
  • Wallpaper flour (third grade). In packs of this flour, you will find whole crushed blacks, approximately to the size of semolina. To use it for baking bread, you also have to mix it with a better one.
